I've just renovated a sitar and am now in the process of fitting the strings. I have a question about one of the nuts - The lower nut with the string grooves. I had assumed that the projection on the end of the nut, was to carry two of the strings, but looking at close-up photos of sitars, it appears that all five strings run over the main part of the nut. So, can anyone tell me the purpose of that projection ?

Nope. The nut extension does not hold strings. 
It just sometimes looks like it does. 
It is just a traditional design element. 
Sometimes it is the shape of an animal head or some other thing. 
All the main strings go over the main part of the nut, where the slots are.
